Chef Phubase Chuprakong of Aquila Cafe and Restaurant has built quite a reputation around town for being creative.

With decades of experience in some of Asia’s best kitchens under his belt, he opened two restaurants in the past two years, each designed to reimagine many classical international dishes and presenting them to a mainly Thai clientele.

By giving traditional dishes creative twists and punchy flavours, his restaurants are now firmly established destinations where diners know that they are guaranteed quality and creative food at very reasonable prices.

Not one to sit on his laurels, Chef Phubase has recently opened up a new venture on Huey Kaew Road’s Think Park, which has now rebranded itself to feature Japanese-inspired businesses.

Amidst the sushi bars, omasake restaurants and ramen stalls is Aquila Pasta and Tapas, a charming eatery serving some truly unique, fun and tasty dishes not seen anywhere else in the city.

Mediterranean-inspired Japanese food is served tapas style, making for an exciting dining experience or a great night out.

Order sake, beers, wines, and sit back and sample any number of intriguing dishes such as the red prawns cooked with spices and butter in a Spanish style, but served on sticks the Japanese way. Or try the diced wagyu bruschetta slathered with truffle sauce. There are numerous yakitori sticks to order, from vegetarian to meats and seafood.

Chef Phubase’s home made pastas – fettuccini, penne, pappardelle, spaghetti – are served with delightful sauces such as the shrimp roe cream or the grilled sirloin curry sauce.
